I’m back to omitting wheat, gluten, and sugar from my diet, which means that I need to find more breakfast choices to incorporate because this is the meal of the day that causes me the most frustration when trying to stick to the dietary restrictions.
Well, fat-free Greek yogurt is my new obsession, which is low in calories and provides a hefty dose of protein. Do you know what tastes really good together? Plain Greek yogurt, apple and walnuts. It’s almost like a dessert in disguise.
Choose a natural sweetener of your choice, and mix in with 1 cup of non-fat Greek yogurt. For me, I add a couple drops of NuNaturals alcohol-free vanilla stevia. I like liquid sweeteners because they dissolve better than a granulated sweetener. Cube one apple and add to the yogurt– I prefer the greener kinds of apples, like Granny Smith and Crispin. Honeycrisp would also be a real treat. Stir in ¼ cup of chopped walnuts to the mix.
Mix all the ingredients together and you have a tasty breakfast, filling snack, or quick protein-packed lunch.
